It may look like garlic gone bad, but it's a trending new product. Black garlic is a type of aged garlic whose browning is attributable to Maillard reaction rather than caramelization. It is made by heating whole, Texas-grown bulbs of garlic over several weeks, a process that results in black cloves. The result is a totally unique sweet, earthy umami flavor.
