Every one of Brazos Valley's cheeses are made with raw cow's milk and all the hard cheeses are aged in their underground cheese cave.
A Brazos Valley original, Van Sormon is a raw cow's milk cheese with a dense, nutty flavor similar to a mild Swiss cheese. For the first two weeks of the aging period, each wheel of Van Sormon is hand-rubbed with cinnamon, sorghum, and vanilla.
